When people talk about Mexican spirits, the first name that comes to mind is often tequila. But this world-famous spirit is increasingly being overshadowed by a true jewel of Mexican distilling art - mezcal. This fascinating agave liquor, deeply rooted in the culture and history of Mexico, opens a window into a world rich in tradition, craftsmanship and incomparable taste experiences.

Mezcal, whose name comes from the Nahuatl language and means something like "cooked agave", is the result of a complex manufacturing process that has been passed down from generation to generation for centuries. The diversity of the spirit comes from the fact that it can be made from over 30 different types of agave. Each type of agave brings its own unique aromas, ranging from sweet to intensely smoky.

The process begins with the selection and harvest of the ripe agaves, which often only reach their ideal maturity after eight to ten years. The agave hearts, also called piñas, are then placed in earthen pits lined with hot stones. There they are slowly cooked over several days, which gives them their characteristic smoky taste. After cooking, the piña is ground and the resulting juice is fermented. The subsequent distillation usually takes place in traditional copper stills, a process that gives the mezcal its purity and complex aroma profile.

The art of making mezcal requires not only knowledge and skill, but also time and patience. Every step of the process influences the final product, and mezcal producers place great importance on adhering to traditional methods to ensure the highest quality of their spirits.

Mezcal is offered in different stages of maturity: Joven (young and clear), Reposado (aged in wooden barrels for at least two months but less than a year) and Añejo (aged for at least a year). This variety of maturity levels offers the right Mezcal for every taste and occasion. While Joven Mezcal impresses with its fresh and clear nature, Reposado and Añejo develop additional aromas and complexity through storage in wooden barrels.
