Gin, whisky and beer from one house - that is unique in Scotland. When producing their spirits, the Eden Mill Distillers combine the best of the three crafts - and show courage to try something new: the gin is sometimes matured in a bourbon barrel, the unhopped beer provides the basis for the whisky. The small batch gins are produced by hand, the distillery uses the ingredients that the region supplies and is inspired by these to create new, unique gin recipes. The Eden Mill distillery opened in 2012. The goal: to bring the art of distilling and brewing back to St. Andrews. They are the first in 150 years to produce spirits again in the small town on the Scottish east coast, which is known worldwide as the home of golf. Eden Mill is also the only place in Scotland to combine a brewery and distillery under one roof. Due to its location at the mouth of the River Eden in the immediate vicinity of fields, forests and the coast, the team has direct access to a variety of special and unique botanicals - the basis of their gins. Eden Mill Spirits are characterized by the love of experimentation of their makers: the small batch gins are refined in traditional copper stills and with unusual botanicals, such as hops or coarse, matured oak pieces. Eden Mill also produces aromatic beers with strong character. In their unhopped state, they form the basis for Eden Mill Single Malt Whisky.
