When Denis McCarthy, Ger McCarthy and John O'Connell founded West Cork in 2003, it made little economic sense to open a distillery. Equipped with their families' distilling knowledge, the food developer and the two fishermen got started anyway. Today, West Cork is based in Skibbereen - as the largest wholly Irish-owned distillery in the country.
This remarkable success is based on the vision of the three founding friends: to produce whiskeys of the highest quality at attractive prices. This is achieved, among other things, with creative cask finishes that show Irish whiskey in all its facets. For example: refined in rum barrels.
West Cork bottled a limited special edition of its West Cork Rum Finish Single Malt at cask strength exclusively for the German market. 3,060 bottles demonstrate the delicious effect of four years in first fill bourbon casks and six months in rum casks from Panama: The small batch unfolds aromas of honey, vanilla and chocolate, which turn into roasted notes of coffee, accompanied by exotic fruit and coconut notes.
