Daithi O'Connell was a globetrotter through and through, and his travels ultimately led him to whiskey. His vision is to bring limited, independent bottlings to market and demonstrate that the "Irish Whiskey World" is just as diverse as the world he has been privileged to explore.
The search for good whiskeys and interesting barrels began. From the very beginning, it was important to Daithi that the already matured whiskey be transferred to its own barrels for further maturation. In addition to new French oak barrels and Vin Doux Naturel, American bourbon and virgin oak barrels are also used.
In this series, only single grain whiskeys are bottled in small batches. The newest whiskey is a 10-year-old single grain whiskey that has been aged in bourbon and rye whiskey barrels. These barrels were carefully selected to further enhance the whiskey's special characteristic—the spice of rye whiskey. This barrel enhances the vanilla, caramel, and honey notes one would expect from a bourbon barrel. The grain whiskey comes from the Cooley Distillery and was then allowed to mature in the selected barrels. It has not been colored or chill-filtered.
