Two Stacks Whiskey is reviving the tradition of whiskey bonding. In the past, it was normal in Ireland for pub owners and grocers to blend and bottle their own whiskey. Today, the tradition is increasingly coming back to Ireland. Two Stacks also pours the whiskey into its own barrels, lets it mature and then composes individual blends.
"The Blender's Cut" is a limited edition of 222 bottles. It is the Irish whiskey with the highest alcohol content on the market. A whiskey for which barrels have been carefully selected and assembled. Each bottle was filled and labelled by hand. A complex blended whiskey composed of 5 different whiskeys:
Grain whiskey from a virgin oak cask (40%), grain whiskey matured in an ex-bourbon cask (40%), pot still whiskey matured in an ex-Oloroso sherry cask (8%), double distilled single malt matured in an ex-bourbon cask (10%) and peated single malt matured in an ex-bourbon cask (2%). It is important to Two Stacks to be as transparent as possible, hence the percentages of whiskey in the blend.

Aroma: a mix of smoked maple and caramel before the sherry notes emerge
Taste: very oily, peat, caramel, raisins and virgin oak resin
Aftertaste: Peat with bread and sweet pudding, followed by sweet grain
