The single pot still whiskey bottled by the Skellig Six18 Distillery was first stored in ex-bourbon barrels before being finished in PX sherry casks. There is another little twist: a small part of the whiskey was also placed in an ex-peated cask as a bonus. This gave the whiskey additional bitter, spicy notes that are barely noticeable in the taste, but contribute very positively to the overall complexity of the bottling at 43 percent ABV.
