The Ki No Bi Gin from the Kyoto distillery is really special: The basis of the Ki No Bi Gin is not a grain spirit, but a rice-based spirit. Despite the significantly higher costs due to the use of rice instead of grain, Kyoto is convinced that the rice spirit brings an unmistakable sweetness and creaminess to the final product. No compromises are made when choosing the water either, so the same water from Fushimi is used for blending that is also used to produce the excellent sake.
The botanicals also deviate from the norm. Kyoto has chosen 11 botanicals, which are divided into six groups and distilled separately for each group: 1. Base (juniper, iris root & hinoki); 2. Citrus (yuzu & lemon zest); 3. Spice (ginger); 4. Herbs (sansho pepper & kinome); 5. Green tea (gyokuro); 6. Fruity & floral (bamboo leaves & red shiso leaves).
KiNoBi Gin is made from purely Japanese ingredients, but the stills come from Germany. A 450-liter still is used to produce the two "dominant" distillates. The other botanicals are distilled in the second still with a capacity of 140 liters, and experiments and recipe development are carried out.
The philosophy of the Kyoto distillery states that you cannot be an expert in everything, but that you should try to master one thing. Gin is therefore the only product of the Kyoto distillery. The focus on just one product has definitely paid off: Ki No Bi Gin convinces gin lovers and critics all over the world.
