Special features: The Holyrood Distillery in Edinburgh uses an unusual combination of Scottish pot still malt and brown malt, which is otherwise primarily used in dark porters, for this single malt. Specially selected red wine yeasts (Pepe Nero and Toro Nero) are also used, giving the whisky a special depth. Maturation in Oloroso sherry casks rounds out the flavor profile with nutty and fruity notes.
