With the 35 yo, officially released last week, Billy Walker has created his oldest bottling to date for The GlenAllachie. With The GlenAllachie 17 yo - Mizunara & Oloroso Cask Finish, he is perhaps his most luxurious. The single malt opens the Masters of Wood series, the new super-premium division of the Wood Collection. It brings together only the finest and most experimental finishes.
The GlenAllachie is known for its flair for sourcing and managing both high-quality and unusual casks from around the world. Part of the impressive inventory? Mizunara casks. Japanese oak is rarely used for whisky maturation due to its high price and the challenges it presents when storing it.
Billy Walker combined the cask rarity with Oloroso sherry puncheons and hogsheads. After 17 years of maturation, the noble result combines typical heather honey with dried orange peel, cinnamon apples and fig syrup and dusts everything with cocoa, pecans and Demerara sugar.
