Daithi O'Connell was a textbook globetrotter and his travels ultimately led him to whiskey. His vision is to bring limited, independent bottlings to market and to show that the "Irish whiskey world" is just as varied as the world he was able to travel.

Now the search began for good whiskeys and interesting barrels. For Daithi, it was important from the beginning that the already matured whiskey was transferred into its own barrels in order to achieve even better maturation. In addition to new French oak barrels & Vin Doux Naturel, American bourbon and virgin oak barrels are also used.

In this series, only single grain whiskeys are bottled in small batches. The newest whiskey is a 10-year-old single grain that was allowed to mature in bourbon and rye whiskey barrels. These barrels were carefully selected to bring a special characteristic to the whiskey - the spiciness of rye whiskey. This barrel supports the vanilla, caramel and honey notes that you would expect from a bourbon barrel. The grain whiskey comes from the Cooley Distillery and was then allowed to mature in the selected barrels. It was not colored and not chill-filtered.
