Description
Keith Bonnington is one of those people for whom whisky is the elixir of life. Based in Edinburgh, he bottles the finest whiskies under the company name The Whisky Cellar. An experienced group of tasting professionals supports him in this. The latest seven bottlings, some of which have been elegantly matured, prove that the concentrated skills and fine palates pay off.
Three single casks from Speyside also benefited from liqueur cask maturation. The Glenrothes 11 yo, with its orange marmalade and cigar box flavours, matured entirely in the Oloroso Cask, while the dark fruity, chocolatey Craigellachie 12 yo and the spicy, fruity Strathmill 15 yo were refined in it.
Senior of the round is the Single Grain Scotch Whisky Girvan 34 yo 1989, filled into a refill bourbon hogshead, it unfolds a complex panorama of sweet pears, coconut, tropical fruits and oak spice.
