Killowen Dark Rum is the first rum to be made entirely in Ireland. It was fermented entirely in the distillery: 50% sugar cane molasses and 50% sugar. After fermentation, everything was distilled 2.5 times in the small copper stills. The Solera process was used to mature this rum. First, the rum was matured in 6 50-litre bourbon barrels, then in a PX sherry cask and finally in a Cabernet Sauvignon cask.

The focus for the rum is also on pot still distillation and barrel aging. The rum is very balanced, spicy and you can taste the molasses. A really very successful rum.
