Palate: . Aftertaste: . Origin The Caol Ila Distillery was founded in 1846 by Hector Henderson in a bay on the east coast of Islay, just north of Port Askaig directly on the Sound of Islay. In 1854, Norman Buchanan, the then operator of the Isle of Jura Distillery, took over the distillery. In 1863, Caol Ila passed to Bulloch, Lade & Co., who expanded and renovated the distillery in 1879. In 1920, Caol Ila then went to Robertson & Baxter. In 1927, the distillery finally ended up with the Distillers Company Limited (DCL). In 1930, DCL delegated operational management to its subsidiary Scotish Malt Distillers (SMD), which closed it down by 1937. After only four years of production, the next break followed in 1941, which lasted until 1945. From April 1972 to January 1974, the distillery was thoroughly renovated, during which time no production took place. The number of stills was increased from two to six. The owner DCL became United Distillers (UD) in 1987, and then Diageo in 1999. The subsidiary SMD is now called United Malt and Grain Distillers (UMGD) and holds the license that was held by Bulloch, Lade & Co. until 1992. In 2022, the visitor center was extensively renovated, among other things. Caol Ila has a stainless steel mash tun with a capacity of 11.5 tonnes, ten larch wash backs with a volume of 63,000 litres each, three wash stills with a capacity of 35,345 litres each and three spirit stills with a capacity of 29,549 litres each. All stills are steam heated. The malt used comes from Port Ellen Maltings and has a phenol content of around 30 ppm. The water for production comes from Loch nam Ban (Torrabolls Loch). In addition to the company's own warehouses, the warehouses of the Lochindaal distillery near Port Charlotte, which has been closed since 1929, are also used. Annual output is more than 6.0 million liters. The majority of production goes into blends.
