It was distilled in November 2017 in a Stupfler still and matured for 3 years in a freshly emptied Sauternes barrique from Chateau l'Hermitage. In December 2020, the barrel was bottled uncolored and not chill-filtered. Sauternes is the name of a French wine-growing region south of Bordeaux and is known for its sweet white wines. It belongs to the Bordeaux wine-growing region. The small river Ciron flows through Sauternes, whose cold spring water flows into the warmer water of the Garonne and forms fog in the autumn, which provides the best opportunity for the noble rot fungus Botrytis cinerea to increase the sugar content of the grapes. In contrast to the Vin Doux Naturel such as Banyuls or Rivesaltes, the production of sweet wines without alcohol is the norm in the AOC Sauternes. The most famous winery is the Château d'Yquem.
