Daithi O'Connell was a textbook globetrotter and his travels ultimately led him to whiskey. His vision is to bring limited, independent bottlings to market and to show that the "Irish whiskey world" is just as varied as the world he was able to travel.
Now the search began for good whiskeys and interesting barrels. For Daithi, it was important from the beginning that the already matured whiskey was transferred into its own barrels in order to achieve even better maturation. In addition to new French oak barrels and Vin Doux Naturel, American bourbon and virgin oak barrels are also used.
Bill Phil is named after the founder's great-grandfather William Philip O'Connell, a blacksmith from County Limerick. He was famous for his handmade peat cutter known as the Bill Phil Sleán. This whiskey takes us back to the time before coal came to Ireland. It is sweet and slightly smoky, with malt and citrus notes.
The whiskey is not colored and not chill-filtered.
