Five years have passed since the Clonakilty Distillery started distilling malted and unmalted barley in May 2019. Now the time and whiskey are ripe for the first Clonakilty Single Pot Still to see the light of day in the whiskey world.
The distillery used grain from owner Michael Scully's family fields. The resulting pot still distillate was stored not far from the fields in the warehouse above the Atlantic coast. This exposed coastal location allows for strong maritime influences. These are now excellently reflected in the Clonakilty Single Pot Still. For the subsequent barrel maturation, the team led by head distiller Oisín Mulcahy used a combination of ex-bourbon barrels, amontillado and oloroso sherry barrels. The bottle was filled with an alcohol content of 46%.
