Blackwater A Dó Irish Poitín , Poitin, 48% Vol.,
To produce the Blackwater x Killowen A Dó Poitín, the two owners Peter Mulryan and Brendan Carty first exchanged the key raw materials in order to develop a common mash recipe: the grain. Peter contributed the historic Old Irish barley variety from his southern county of Waterford. Brendan provided the oats grown in northern County Down. While the barley went into the mash unmalted, Brendan had previously dried the oats over peat during malting. Then both distilled the unmalted barley and the peaty oat malt twice on their respective stills.
This resulted in two distillates, distilled from the same ingredients and using the same recipe in two different distilleries in the two parts of Ireland. Peter and Brendan finally combined these two distillates to create Blackwater x Killowen A Dó Poitín. As is usual for this spirit, the Poitín was not stored in barrels, but bottled directly for consumption. After the blending, it was bottled at drinking strength with 48% ABV.
