Nose: beeswax, ripe banana, kumquats and bergamots, honey, quince paste and jelly.

Palate: Menthol, tobacco and oak, herbal tea, thyme, lime, cinnamon rolls with raisins, liquorice.

Description

They have been directly or indirectly connected since 1730: the vineyard and the family of Jean-Luc Pasquet. The high-quality cognacs of the organic-certified family business are made entirely by hand - today under the management of son Jean and his wife Amy. With Trésors de Famille, the two founded a series that tells the stories of winemakers and master distillers from the region.

Le Cognac de Paul L.57 is the liquid legacy of Paul Gaillard. The Grande Champagne Cognac was created at a time when Paul distilled in his own still, next to which he used to sleep during the season. The family treasure was guarded for three generations until Paul's granddaughter Carole decided to honor her grandfather with this single cask. Bottled at cask strength, it is a "[...]very old cognac full of vigour and response," says Serge Valentin of whiskyfun.com, who honors Paul's 65-year-old legacy with 90 points.
