Hellyers Road is one of the distilleries that form the epicenter of Australian whisky production. Their single malt is based on barley malt from Tasmania's oldest brewery. A long fermentation process of a good 65 hours lays the foundation for the whisky's bright fruit and citrus notes. The Tasmanians carefully and very slowly distill 2.5 times in two large pot stills made of stainless steel and copper for 72 hours. The result? Real whisky variety.
