The Liberator Whiskey celebrates the legendary Daniel O'Connell, who fought for Ireland's freedom using peaceful and lawful means. But the O'Connell family also has a long tradition in the spirits trade and as whiskey bonders. Maurice O'Connell is now reviving this tradition with his whiskeys.
The Liberator Small Batch Double Port is a blended whiskey with a high single malt content of 42% and finished in two different types of port wine casks: Tawny and Ruby Port Casks. First, the single malt and the single grain matured in bourbon casks. The single malt was then finished for 9-12 months in Ruby and Tawny Port Casks and the grain whiskey was finished only in Ruby Port Casks for 12 months. The whiskeys used are between 14 and 5 years old.
A lot of emphasis was placed on the slow dilution. The whiskey was diluted over 5-6 weeks; this process is important to give the whiskey its full flavor.
Batch 1 is limited to 1,000 bottles, uncolored and non-chill filtered.
