Description
When a coffee producer extracts the bean from the coffee berry, they discard the rest, the fruit. The fruit is called cascara, it is deep red in color, rich and fruity in flavor.
Cascara is steeped in alcohol to create an extract, a perfect infusion accompaniment to our sweet vermouth. The base of our vermouth is a fortified wine that was historically used to add flavour to casks in preparation for the final stages of malt whisky maturation.
After use, this brandy is often resold or
even disposed of.
