For its latest whiskey, the Clonakilty Distillery sourced a single grain whiskey from ex-bourbon casks. It stored this in its Atlantic Warehouse on the cliffs of Galley Head, a short distance outside of Clonakilty. It then filled the whiskey into ex-rhum casks from the Caribbean island of Martinique for the finish. Bottled at 46%, the Clonakilty 13 Year Old Single Grain Rhum Cask Finish exudes its full Caribbean flair of caramel, heated toffee and flambéed banana. More tropical fruits come through towards the end. A dessert whiskey with a tropical flair.
