Tasting Notes
Nose: Initially, hints of freshly uncorked old red wine from Burgundy. This is followed by a rich bouquet that combines fresh apple, dark oil, old oak and mineral accents. A complementary hint of cherries and prunes makes the nose pleasant and complex.
Palate: Deep and multifaceted, notes of freshly baked apple pie unfold with warm tones of cinnamon, cloves and dark fruits. Layers of nougat and cream provide a pleasant creaminess. The taste experience is dense, complex and constantly reveals new layers.
Finish: Long-lasting and mouth-filling, with an intense note of naturally cloudy, homemade apple juice. A tribute to the art of traditional distillery and a pleasure that unfolds with every sip.
Description
Guillaume Drouin was infected with the Calvados virus by his father. Today he runs the traditional company from Pont-l'Évêque in Normandy and uses his distillates to reveal the full complexity of the 35 or so organic cider apple varieties from his own orchards.
The highly limited Christian Drouin 1991 comes from the house's rich, matured stocks. The single cask fills the sixth page of our Journal des Kirsch and tells of the renowned Pays d'Auge, the heart of the precisely defined growing region for apple brandy.
The Calvados was distilled in Drouin's traditional still, which consists of three small stills with a capacity of 400, 600 and 1,200 liters. It was then matured in a barrel that was over 60 years old, which gave the young brandy an incomparable rancio note. After 32 years, the rarity was finally bottled in November 2023 - at cask strength, without any additives or artificial flavors, in just 84 bottles.
