Although based in London, the craft distillery is not influenced by the fast pace of the metropolis. With attention to detail, seven-day fermentation and two directly fired pot stills, sought-after English single malt is created here. From today, this is exclusively available in two versions for the German market.
The Germany Edition 2023 (with illustrated Bimber eagle, not federal eagle) compares a whisky made from barley malt with a bottling made from peat malt . Both matured in a cask pre-filled with the sweet Pedro Ximénez sherry . The Bimber Pedo Ximénez Sherry Cask #456 marries the light, fruity character of the London craft distillate with dark notes and baking spices in a total of just 280 bottles.
Fully peated whisky from Bimber has only been known since spring 2023. The distillers bring peat from Aberdeenshire to London and dry the barley malt themselves in a custom-made drying oven . The smoky and fruity Bimber Pedo Ximénez Sherry Cask #458 is the result of these high craftsmanship standards.
